Pho-nominal Chicken Pho

With winter just around the corner its time to pull out the ugg boots, trackies and some good old soup.

This is our spin on the famous “Vietnamese soup” Pho. Its quick and super easy to make and even better, it can be made in a big batch for the week.

INGREDIENTS

1L of chicken stock (reduced salt)
Piece of ginger, peeled
3 teaspoons of Tamari sauce
Chilli
1 tablespoon fish sauce
Flat rice noodles
2 tablespoons lime juice
2-3 chicken breast (boiled or cooked in air fryer)
Handful of green beans
Spring onions
Bean shoots
Dried shallots

Combine 1L of stock with 2 ½ cups of water, ginger, Tamari sauce, fish sauce and Chilli in large pan. Cover and bring to boil.

Once boiling, add in green beans, and spring onions and simmer for 10 mins.

Place flat rice noodles and cooked chicken into broth mixture then simmer for another 2-3 mins.

Serve with bean shoots and shallots.
