Coconut flour pancakes

No matter the season, day or time, pancakes are always a good idea.

Being home a bit more has allowed for more time experimenting in the kitchen and we couldn’t be happier. For those who know me know I love cooking and trying to find a way to make a healthier version of popular dishes, I love a good challenge. Protein pancakes have been around for a while and they are great but sometimes you need a pancake that is a little bit fluffier, welcome the coconut pancake

The recipe makes enough for 2-3 people (depending on how hungry you are).

4 eggs
¼ cup + 2tbsp coconut flour
½ cup + 2tbsp almond milk
2 tsp gluten free baking powder
2 tbsp sugar free maple syrup

Place all ingredients into a nutribullet and blend well.
Heat a pan to medium heat.
Use ½ cup measuring cup per pancake.
Cook on low heat till tiny air bubbles form then flip.

Serve with your favourite coconut yoghurt and berries, or lemon and honey. The choice is endless.
