Sweet Potato Mole

1 red onion finally chopped
1 tsp of ginger
2 garlic cloves crushed 
Olive oil or coconut oil
2 tsp turmeric
2 tsp cumin
1 large sweet potato
1 tin crushed tomatoes
Red capsicum chopped
300ml vegetable stock
1 tablespoon cacao
2 tsp sesame seeds
1 tablespoon peanut butter
1 tin kidney beans



Heat oven to 200 degrees

In a pan fry onion, ginger, garlic, and chilli in the oil on medium heat for 10mins. Add in spices and cook for a further 2 mins.

Place the sweet potato on a baking tray and place in the oven for 45-60 mins.

Add the tomatoes, capsicum, stock, cacao, sesame seeds, peanut butter and kidney beans. Simmer for 45-60 mins.

Cut open the sweet potato and serve the mole on top.
